French Toast Roll Ups (Gluten Free)




Ingredients

2 eggs
2 tbs milk
8 slices GF bread
1/4 cup caster sugar
1 tsp cinnamon 
butter
jam or your chosen filling


Method 

Whisk milk and egg together and set aside. 

Combine sugar and cinnamon on a plate and set aside.

Cut crusts off your slices of bread and flatten them down a bit with your fingers. 

Spread a thin layer of your chosen filling over the bread. Roll bread firmly into a log shape.

Melt butter in a pan over medium heat. 

Dip bread into egg mixture and turn to coat. Place in pan, turn, rolling until each side is browned and golden.

Roll each in cinnamon sugar to evenly coat.  

Serve immediately.
