Low Fat Chicken Rice




Ingredients

1.5 cup cooked rice
500g chicken mince
2 spring onions - finely diced
3 mushrooms - chopped
1 red capsicum - diced
3/4 cup frozen peas and corn
Dash of tamari sauce (or soy sauce)

Method

I like to cook my rice in my rice cooker, you do it however you prefer. 

In the mean time, lightly cook up the onion over stove top, adding the mushrooms and capsicum.   

Once soften add chicken mince.  Cook through using a fork to ensure no lumpy bits.

Once the mince is cooked through, add the cooked rice and frozen vegetables.  Stir through until frozen vegetables are cooked. 

Add a dash of tamari sauce (for those seeking a gluten free option) or soy sauce if preferred, this just adds a little flavour.

Note:  The vegetables listed in the ingredients section are approx.  there really is no right or wrong.  Add your preferred vegetables or whatever you have available at the time.
