Salt & Vinegar Smash Potatoes



I'm always on the look out for easy snacks or weekend nibbles for my daughter who has Coeliac disease.

Salt & Vinegar Smash Potatoes are definitely a winner for anyone who loves Salt & Vinegar Crisps.


Ingredients

1 kilo small potatoes (skin on)
1 cup of white vinegar
Oil
Salt

Method

Boil potatoes for 20 minutes.  You need to add the white vinegar to boiling water, allowing the favour to infuse the potatoes.

In the mean time heat oven to 180C.  Drain potatoes and place on lined baking tray.  Using a cup 'smash' potatoes.  (squash to your liking)  The more they're squashed the crispier they'll get.

Drizzle with a little oil, (or spray with oil if you prefer).  Place in the oven for 20 minutes.  Flip potatoes and do the same for a further 20minutes.

Remove from the oven and season with salt before serving.
