Butterscotch Meringue Pie



Ingredients                                                   
6 oz brown sugar ( 2/3 cup)
3 tbs flour
3 tbs corn flour
3 eggs
1 ½ oz butter (3tbs)
Vanilla
Salt
1pint milk (2 ½ cups)
3 oz castor sugar (1/3 cup)


1.    Combine brown sugar, cornflour, flour and salt in double saucepan.
2.    Blend in milk gradually, stirring constantly, cook slowly until thickened and cook for further 15 mins.
3.    Add yolks and cook for 2 minutes
4.    Remove from heat and add butter and vanilla.
5.    Pour into cooled pie crust and cover with meringue made from 2 whites and castor sugar.
