Ingredients
800g chicken mince
1 red chilli
1 tbsp. minced garlic
40g fresh coriander (or coriander paste)
40g fresh Thai basil (or basil paste)
3 shallots
3cm ginger
1 lime zest
40g lime juice
40g fish sauce
2 eggs
20g sesame oil
Method
Place, red chilli, garlic, coriander, basil, shallots, ginger into bowl [2 seconds, speed 7] *Do several times as required, scrapping down sides each time
Add all remaining ingredients [Reverse, 5 seconds, speed 2] or until combined
Using two spoons, place in fry pan and shallow fry
** Dipping Sauce **
1 red chilli
2cm fresh ginger
20g coriander
20g sesame oil
40g olive oil
20g fish sauce
25g lime juice
1 tbsp. brown sugar
Blend chilli, ginger and coriander, then add remaining ingredients
